Started working at a cafe in his 20s, and when he became a store manager in his 30s, he suddenly realized that "I thought I knew a lot about coffee, but I didn't," which sparked his interest in roasting. In order to gain knowledge, he spent two years studying roasting at a roaster one to two days a week. In 2017, he started roasting in-house, mainly for in-house use. He then opened "JOE TALK COFFEE" in March 2022.

What is important in roastingThe

most important thing is to bring out the best in the green beans, and in order to do that, we believe it is important to thoroughly remove moisture from the green beans.

Good quality green beans lead to good coffee, so we take great care from selecting the green beans to checking their quality.

When selecting raw beans, we try to use beans from producers whose faces we can see.

Our thoughts about coffee and our shop

First and foremost, we want to cherish the importance of delivering delicious coffee every day. I drink a wide range of coffee, from light roast to dark roast, so I want to provide coffee that more people can enjoy freely. As a shop, we aim to provide coffee that can be used on a daily basis. Regarding the issues facing coffee (producer income and climate issues), I would like to do whatever I can to help make coffee sustainable. I
